Leche Flan



Leche flan
1¼  cups evaporated milk
¾ cups  water
8 egg yolks
1 tsp. lemon rind or vanilla
½ cup caramel syrup *

Scald the evaporated milk and water in double-boiler for 15 minutes.  Beat egg yolks.  Add sugar, milk and flavoring.  Pour into 1 quart mold.

*Caramelized syrup
1 cup sugar
½ cup hot water

Melt sugar in heavy metal container.  As soon as sugar is golden brown, add ½ cup hot water to dissolve caramelized sugar and form syrup.

Put the mixture in a mold and cover with wax paper fastened wit a cord.

Place the mold in the pressure cooker.  Put enough water to submerge the bottom of the mold.  Cover well and put gauge in #5.  When it starts to "tic tic tic", count 3 minutes and remove pressure cooker from the stove.  Leave it to cool.  Before opening the pressure cooker, remember to remove the gauge.

**This is my favorite dessert and I'm really going to make one.
