Salad dressing:
6 tbsp. rice vinegar
8 tbsp. olive oil
5 tbsp. creamy peanut butter
3 tbsp. soy sauce
3 tbsp. brown sugar
2 tbsp. minced fresh vinegar
1½ tbsp. minced garlic

7 c.  shredded cabbage
2  red bell pepper, blanched and cut into matchstick strips
½ c.  fresh cilantro or parsley, chopped

Whisk salad dressing ingredients in small bowl to blend.

Combine vegetables in a large bowl.  Add dressing and toss to coat.  Season with salt & pepper.

Variation:
You can add drained pineapple chunks and marshmallows.

Quick Tip:
Choose a cabbage that is heavy, compact and has shiny, well-colored leaves that are free from cracks and bruises.
